Okay, so like I have mentioned before, I eat a lot of raw food! I mostly snack on raw fruits, veggies and smoothies all day long! Yummy!!!! Like I said, I eat a LOT of raw food, but I am not 100%. When dinner time comes around, sometimes I go the raw route and sometimes I take the road of cooked! Either way, I try to eat yummy, healthy and easy to make foods for dinner!
Alright, Tanni. That’s nice! But what exactly do you eat for dinner? Well the answer is that I eat a lot of different things! However, here are a couple of dinners that I have made recently. One raw dinner and one cooked dinner!
Raw dinner: Zucchini Alfredo Pasta!!!!!

So yeah, this is my RAW dinner! No cooking going on here! If you are not familiar with un-cooked “pasta” dishes, I strongly recommend you give them a go! They are really easy to make, RAW, and absolutely delicious!
When I make food, I tend to do it a little bit different each time. I don’t really measure stuff much, I just sort of throw together what feels right that day, lol. The noodles are just zucchini! I don’t have one of those fancy spiralizers so I just use a potato peeler to make my noodles. The sauce….umm…..trying to remember what was in the sauce! Ha ha! The base is soaked sunflower seeds. Other ingredients: lemon juice, olive oil, FRESH BASIL, lots of garlic, probably some other seasonings, most likely some salt and pepper, probably a little zucchini itself to thicken…….like I said, I am still making adjustments to this one! But if you want to make this and have any questions, just let me know and I can probably come up with some more specifics!
Cooked dinner: Oven Roasted Eggplant and Sautéed Veggies!!!
Yes, that is eggplant, not steak!!! Lol, someone told me the picture looked like steak!

Oh my goodness! This is SO good! I got the idea to cook the eggplant this way from here: http://www.finecooking.com/recipes/oven_roasted_eggplant.aspx You can add whatever seasonings you like to the eggplant, either fresh herbs or dried will work. My personal preference is rosemary for this recipe. Yum!!!! I usually serve the eggplant with a side of pasta/marinara sauce for dipping. It is REALLY easy to make, but you do have to remember to get it started about 2 hours before you want to devour it!
As far as the veggies go, all you have to do is pick your favorite vegetables for sauteing, chop them up and throw them in a pan with some pre-heated olive oil and your favorite seasonings! So easy and SO good! This time for veggies I used mushrooms, tomatoes and yellow bell peppers. Some of my other favorites include zucchini, summer squash, asparagus, broccoli, and other colored peppers. Also, I always use olive oil when I am cooking savory dishes. Not only do I believe it to be one of the healthiest oils out there, it is also the best TASTING. Oh, my!

That is awesome that you are into raw food too!!! Yeah, most of the time I try to keep things pretty simple. Green smoothie for dinner? Or how about a bag of apples, lol! 🙂
If you want to go a step above THAT simple then things like the zucchini pasta are pretty easy too!
